I make spaghetti sauce loaded with mushrooms and I make mushrooms roasted with garlic, butter, and thyme served over wild rice, yumm!

But here’s something even better than the taste.  A study in the Journal of Alzheimer’s Disease and reported in the Times on March 20, 2019 tells us that eating mushrooms can help prevent MCI (minimal cognitive impairment) a prelude to Alzheimer’s dementia.  Those who consumed 1 to 2 portions had a 43% decreased risk and when subjects consumed more than 2 portions, they had a 52% decreased risk!

The reason they say is not clear but “mushrooms contain various antioxidants that may inhibit the buildup in the brain of amyloid beta and tau. “

We hear so much doom and gloom about Alzheimer’s but here is a very simple, inexpensive, and delicious way to beat the odds.
